This year's thyme honey
The thyme flowered late, and the honey is darker than last year's.

Our honey comes from a beekeeper in the garrigue of Gozo, where the wild thyme flowers in early summer. This year the spring was dry, the flowers came late and the honey is darker and stronger.
It goes on the ġbejniet, into the parfait in Valletta and the semifreddo in Victoria, and into the jar you can take home.
