Kusksu with broad beans and stuffed artichokes are back on the menu.
In March the fields of Gozo and the north of Malta are green with broad beans. We cook them the old way, in kusksu with a ġbejna in the bowl.
The artichokes are stuffed with olives, anchovy and mint, as in every Maltese kitchen in spring.
